Easy Egusi with mushrooms

What you need

Ground Egusi
Ground Dried Pepper
Chopped Onion
Salt
Maggi (To taste)
Meat of your choice(Dried fish,Cow feet, Kpomo)
Mushrooms
Palm Oil


Steps

1. Wash meat and dried fish and put in the pot you would like to cook the soup in(I'm assuming that you bought the overtly dried fish we buy in african stores here in the US that need prayer and fasting to get soft)

2. Cover with water.

3. Add Pepper,chopped Onion, salt and maggi to pot.

4. Allow to boil on high heat for 8-10 Minutes then lower to low-medium for 15-20 minutes (depending on how soft you want the meat to get).

5. Put back on high heat, put in the egusi(Yes this is how I do it but if you want to fry it please feel free to do so :) lol!!!)

6. Allow to cook for 5 minutes then add the palm oil. and cook for 5 more minutes.

7. Add in mushrooms and allow to simmer for 8-10 minutes.

8. At this point I hope you have decided what you want to eat this sumptious pot of soup with. It would be a good I dea to start boiling the water for your fufu of choice by step 6.

9. Now enjoy(and that's an order :) )

How to make Jollof Rice

Ingredients

Rice
Fresh Tomatoes
Pepper
Tomato Paste
Onions
Salt
Maggi/Knorr/Bullion
Cooking oil
Stock
Water

Method

1.Wash your rice
2. Boil your rice in a rice cooker or in a good old pot till almost done
3.Blend tomatoes,onions,pepper(I add the paste to this after I start blending)
3.Heat some oil in a pot and pour in some chopped onion
5.Stir in the blended tomatoes ET AL;Fry till done
6.Pour in the stock and bullion
7.Add salt to taste
8.Bring to a boil then,pour in you almost done rice(turn down the heat,I advice that you don't stir at this point to avoid burning but if you must stir,take pot off the stove.
9.Allow rice the cook on medium heat till done.
10.Dish jollof rice and dig in.

How to make Fufu

Utensils needed:

Pot
Water
Ladle
Bowl

Ingredients

Water(depends on how much you're making)
Fufu mix(flour)

Method:
1.Boil some water in a pot and bring it to a boil.
2.Pour a bit of fufu and water in a bowl and mix till you have a smooth,not too thick solution
3.Stir the solution into the boiling water and allow to come to a boil
4.Pour in some more fufu powder and stir with the ladle till it feels like dough(Turn down the heat @ this point)
5.Take pot off of the burner ,fire,stove,cooker or water ever source of heat you're using(It's alive!just kidding,your fufu is done)
6.Serve this with any African soup(that is soups intended to be eaten with fufu)

Hint:Scoop fufu out of pot before it cools down and pour some water in pot so it doesn't stick and it's easier to wash.

Did I mention Step 2 helps avoid lumps in fufu?Pros would skip this step and pour the fufu directly into the boiling water but I assume people looking @ this recipe have not attained that status yet.
